This is not only healthy but a delicious alternative to your average oatmeal. I often serve just the blueberries and lime sugar as dessert. It is a wonderful way to start your day or to end your night in the summertime. Serves 2.
Blueberries & Lime Sugar
- 1/2 pint Blueberries, washed
- 1.5 tbsp Sugar
- 1 Lime, zested
Combine all ingredients together in a small bowl.
Steel Cut Oatmeal:
- 1 tbsp Butter
- 1/2 cup Steel Cut Oatmeal
- 1 1/2 cups Boiling Water
- 1/2 cup Milk
- 1/2 tsp Salt
- 1/2 tsp Cinnamon
In a medium saucepan melt the butter. Add oats and toast them for 2 minutes until fragrant. Reduce the heat to low and add the boiling water and salt to the oats. Cover and cook for 25 minutes. Add milk and cinnamon to the oatmeal and cook for an additional 5 minutes with the cover on. After five minutes, remove the cover and cook for 3 more minutes or until desired thickness. Sometimes I add more time if I want thick oatmeal and other times I am feeling thinner oatmeal. Top with the blueberries and lime sugar.
